What it pairs with
-
Raw seafood
Salinity and citrus acidity are the classic companions for raw crustaceans and molluscs. -
Insalata di polpo
The wine's mineral-citrus profile mirrors the lemon-dressed octopus. -
Grilled vegetables with herbs
Aromatic Zibibbo and herbal Grecanico complement char-grilled summer vegetables.
History
Occhipinti introduced the white SP68 to mirror the red, blending native Grecanico with Zibibbo from her organically farmed Vittoria plots. It shares the road-name identity and natural-wine ethos of the red, adding aromatic depth from the Zibibbo grape.
