In the glass
Aroma: dried apricot, chamomile, beeswax, orange peel
Palate: dried stone fruit, tannic texture, saline, almond
Grecanico fermented on skins in amphora: a paradigmatic skin-contact white of honeyed stone-fruit richness, firm phenolic texture and saline-mineral finish.
What it pairs with
-
Grilled octopus with lemon and olive oil
The wine's phenolic grip and salinity echo the char and brine of the octopus. -
Sicilian pasta alla norma
Skin-contact tannins complement the richness of fried aubergine and aged ricotta. -
Hard Sicilian cheeses
Beeswax and dried-fruit notes are a classical pairing with aged caciocavallo.
History
Alongside the Pithos Rosso, COS launched the Pithos Bianco from organically farmed Grecanico, macerated on skins in terracotta. Both wines were foundational in establishing the international orange-wine movement and Italian skin-contact categories.
- 2000 — First skin-contact Grecanico vinified in amphora at COS
