Aroma: white peach, almond blossom, fennel, sea salt

Palate: citrus pith, green apple, herb, mineral salinity

COS's white blend shows Sicilian native whites at their most expressive: peachy Inzolia rounds Grecanico's herbaceous mineral edge, finishing with sea-salt salinity.

What it pairs with

  • Grilled branzino with capers and lemon
The wine's salinity and citrus mirror the capers while its body supports the fish.
  • Pasta con le sarde
Fennel-forward aroma echoes the sardine-fennel combination of the classic Palermo pasta.
  • Seafood antipasto
Bright acidity cleanses the palate between varied seafood textures.

History

Rami was developed by COS to showcase the native Sicilian white grapes Inzolia and Grecanico grown organically on the Vittoria estate. The blend reflects COS's philosophy of minimal intervention and native-variety focus.
