The Jura vineyard runs about 80 km along the first ridge of the Jura massif, between Salins-les-Bains in the north and the Sud Revermont south of Lons-le-Saunier. Five grapes are planted here: Savagnin, Chardonnay, Poulsard, Trousseau and Pinot Noir. Its defining wine is vin jaune, a Savagnin aged at least six years and three months in oak without topping up, under a veil of yeast, and bottled in the 62 cl clavelin. Chateau-Chalon makes nothing else. Alongside it sit vin de paille from dried grapes, the Macvin du Jura mistelle, and Cremant du Jura, which now accounts for roughly a quarter of the region's AOC output.
