In the glass
Aroma: white peach, almond blossom, citrus zest, white flowers, light mineral
Palate: green apple, citrus, almond, white peach, saline mineral
Pieropan's estate Soave Classico is the reference-standard expression of the appellation: Garganega's characteristic almond-blossom and white-peach aromas with a saline, mineral finish from the volcanic basalt hillside soils of the Classico zone.
What it pairs with
-
Pasta al burro e salvia (butter and sage pasta)
The wine's delicate almond-blossom note and high acidity lift the richness of sage-butter sauce. -
Grilled sea bass with capers and lemon
Saline mineral Soave is a benchmark white fish pairing; acidity balances the brine. -
Risotto ai frutti di mare
Seafood risotto's creamy, briny character is perfectly framed by Soave's almond acidity.
History
Pieropan is the estate most responsible for rescuing Soave from its mid-20th-century commercial decline, when high-yield plain-grown Trebbiano diluted the appellation's reputation. Leonildo Pieropan insisted on hillside-only Garganega viticulture and single-vineyard bottlings, producing wines that demonstrated what Soave could achieve. The estate Soave Classico remains the foundation of that legacy.
- 1880 — Pieropan estate founded in the village of Soave
- 1971 — Leonildo Pieropan introduces single-vineyard Soave bottlings
- 2009 — Andrea and Dario Pieropan take over estate management
