Filippo Filippi farms the steep Castelcerino hillside vineyards of Soave Classico using organically certified viticulture. His wines are made with native yeasts and minimal sulfur, exploring the volcanic and limestone soil variations across the Castelcerino, Montefoscarino and Turbiana sub-zones.

Tip: Look for the Castelcerino label: grown on the 1971 pergola Veronese trained vines on calcareous hillside soils. Very limited production.

Giovanni Ederle ★ 4.3

A family estate in Montebello Vicentino making Gambellara Classico from volcanic basalt soils at the base of the Berici Hills. Gambellara DOC is the little-known sibling of Soave, also Garganega-based but with distinct volcanic character; Ederle's Classico is among the most honest expressions of the appellation.

Tip: Gambellara Vin Santo (the dried-grape dessert wine version) is also produced by Ederle; a very rare style worth seeking at the estate.

Tip: The Soave Classico DOC (not the single-vineyard Calvarino or La Rocca) is the entry wine; still benefits from one to two years of cellaring.

Inama Soave Classico DOC ★ 4.2

Inama's entry Soave is made from estate Garganega grown on the volcanic hillsides of Soave Classico. Floral and fresh on the nose with notes of chamomile, citrus and almond; precise and clean on the palate. Inama is known for restoring volcanic hillside Garganega to critical prominence.

Tip: Pair with the regional frittura di lago (fried freshwater fish) from Lake Garda; a classic Veneto white-fish pairing.

Coffele Soave Classico DOC Ca' Visco ★ 4.3

Coffele's Ca' Visco is a single-vineyard hillside Soave Classico grown on basalt volcanic soils above the valley floor. White peach, chamomile and mineral saline on the palate; the basalt gives an almost smoky mineral edge. One of the most thoughtful value expressions of volcanic Garganega in the Classico zone.

Tip: Ca' Visco shows remarkable evolution with three to five years of bottle age; the almond-and-mineral character deepens considerably.
