Mael is the flagship Soave Classico from Fasoli Gino, one of the Soave zone's pioneering certified organic estates. ICEA-certified organic viticulture at Colognola ai Colli on volcanic basalt soils gives this Garganega a particularly expressive mineral and orchard-fruit profile.
What it pairs with
-
Sarde in saor (sweet-sour sardines)
The wine's citrus acidity and mineral cut through the agrodolce brine of this classic Venetian preparation. -
Linguine con le vongole
Mineral Soave and clam pasta is one of the Veneto's defining wine-and-pasta pairings. -
Monte Veronese young cheese
Young Monte Veronese from the Lessini mountains is the regional pairing for Soave Classico.
History
Fasoli Gino pioneered organic viticulture in the Soave zone, converting to ICEA-certified organic farming in the late 1980s at their Colognola ai Colli estate. The Mael cuvee (named for a local place name) was developed as the flagship expression of the estate's certified-organic Garganega production from volcanic basalt soils.
- 1985 — Fasoli Gino releases Mael as the flagship Soave Classico DOC from the estate's volcanic parcels.
- 1988 — Fasoli Gino converts to ICEA-certified organic viticulture, among the first in the Soave zone.
