Le Bine is the top single-vineyard Soave Superiore DOCG from Fasoli Gino's organically farmed estate. 'Bine' are the traditional wooden stakes used for old Garganega training; this label celebrates the estate's old-vine heritage from individual pergola-trained parcels on volcanic basalt.

What it pairs with

  • Risotto con asparagi e gamberi
Textured, mineral Soave Superiore is ideal with a richer asparagus-and-prawn risotto.
  • Whole baked sea bream with capers
Mineral stone-fruit complexity matches the brininess of capers and whole baked fish.

History

Le Bine was introduced to represent Fasoli Gino's oldest organic Garganega vines within the Soave Superiore DOCG zone. The name references the traditional wooden vine-training stakes (bine) used for pergola-trained Garganega, a training system being progressively replaced by Guyot in the Soave zone. Le Bine is a tribute to the old method.

  1. 2001 — Fasoli Gino introduces Le Bine as a single-old-vine-parcel Soave Superiore DOCG from certified organic Garganega.
