In the glass
Aroma: ripe stone fruit, vanilla, toasted hazelnut, citrus blossom
Palate: cream, ripe peach, oak-derived vanilla, structured acidity
Amedeo is Cavalchina's premium selection, using partial oak fermentation to add complexity and longevity to the Bianco di Custoza DOC framework. More structured and richer than the standard Custoza, with the oak well integrated.
What it pairs with
-
Roasted chicken with cream sauce
The wine's oak-influenced richness and cream texture are ideal with roasted poultry. -
Stuffed pasta (tortellini in brodo)
Structured white wine complements the delicate flavours of filled pasta in broth. -
Grilled sea bream with fennel
The wine's aromatics amplify the anise note of fennel and the richness of a grilled whole fish.
History
Amedeo was introduced to offer a premium oak-influenced tier to the Custoza range, addressing demand for a more complex, age-worthy Bianco di Custoza. Named for Amedeo Piona, a previous generation of the founding family, it uses the same DOC blend but with a portion fermented in new barriques.
- 1999 — Cavalchina introduces Amedeo as a premium oak-fermented Bianco di Custoza DOC.
