In the glass
Aroma: white peach, almond blossom, chalk mineral, citrus
Palate: stone fruit, mineral, textured from lees, crisp acidity
Monte Tondo's signature Soave Superiore DOCG from the Casette Foscarin single-vineyard site on high-elevation basalt terraces east of the Classico zone. Extended lees contact adds texture while preserving the natural mineral character of volcanic Garganega.
What it pairs with
-
Baccala alla vicentina (Vicenza-style salt cod)
The wine's almond-mineral profile is a classic counterpart to this Venetian salt cod specialty. -
Grilled sea bass with herb oil
Mineral and citrus-accented Soave Superiore is ideal with herb-dressed grilled sea bass. -
Monte Veronese cheese
Regional hard cheese from the Lessini mountains pairs naturally with the area's Soave Superiore.
History
The Magnabosco family's Monte Tondo estate east of the Soave Classico zone has farmed the Casette Foscarin parcel on high-altitude basalt terraces since the 1960s. The single-vineyard bottling was introduced in 1988 to highlight the volcanic basalt and garnet-clay soils that produce a distinctly mineral expression of Garganega, distinct from the tufa-volcanic Classico zone.
- 1988 — Monte Tondo first releases Casette Foscarin as a single-vineyard Soave Superiore from high basalt terraces.
