About Queijo Serra da Estrela

Raw ewe's milk from Bordaleira Serra da Estrela or Churra Mondegueira sheep, curdled with thistle flower (Cynara cardunculus) rather than animal rennet and ripened in two phases over about 45 days. The whole cheese is a flat wheel, 8 to 20 cm across and 4 to 6 cm high in the specification, and Portuguese Wikipedia gives its weight as 0.7 to 1.5 kg; it is drawn here at the midpoint of the size ranges. The paste is semi-soft, buttery and white to yellowish. It was first protected when Decreto Regulamentar 42/85 of 5 July 1985 created the demarcated region of Queijo Serra da Estrela, and the EU registered it as a DOP in 1996 (Regulation 1107/96). The DOP area includes Nelas, Mangualde, Penalva do Castelo and Viseu, beside the Dão vineyards.

Made in: 18 municipalities of the Serra da Estrela area across the districts of Viseu, Coimbra, Guarda and Castelo Branco, including Nelas, Mangualde, Penalva do Castelo, Carregal do Sal and Viseu in the Dão country

On the plate

Mild, clean and slightly acidulous aroma and flavour, with a buttery paste. Under a thin, smooth straw-yellow rind, the specification describes the paste as closed, moderately buttery, creamy and unctuous, deforming when cut; it scores an overly fluid consistency as a defect.

What to pour with Queijo Serra da Estrela

Encruzado, dry white Dão

Our pick

Serra da Estrela's paste is buttery, unctuous and only slightly acidulous. A dry Encruzado white has the acidity to cut that cream and enough texture of its own to match the cheese's soft, rich body.

Young Vinho Verde blend (Loureiro, Trajadura, Arinto) Vinho Verde

Our pick

Portugal Journeys calls Serra da Estrela one of the best cheese pairings at the Portuguese table with Vinho Verde: the wine's acidity cuts the cheese's fat and mild tang. A young, light blend of Loureiro and Arinto, often with Trajadura, does just that.

Alfrocheiro, red Dão

Our pick

A varietal Alfrocheiro red has the acidity to lift Serra da Estrela's buttery, slightly acidulous paste, and the cream of the raw ewe's milk softens the wine's tannin instead of letting it scrape against the cheese.

Medium-bodied Dão red blend Dão

Our pick

Serra da Estrela's buttery paste wants a red that lifts it. A medium-bodied Dão red blend, with tannin no higher than medium and acidity to cut through the cream, refreshes the palate without scraping against the cheese.

Dão white blend, fresh and mostly unoaked Dão

Our pick

Serra da Estrela's fresh paste is buttery, creamy and slightly acidulous. A dry Dão white blend of native grapes, raised mainly in steel or concrete, brings acidity that cleans the palate after each mouthful of the unctuous cheese.

Jaen, red Dão

Our pick

Jaen gives a soft Dão red with low to medium tannin, so nothing firm fights the creamy, unctuous paste of a young Serra da Estrela, and the wine's fruit stands up to the cheese's mild, slightly acidulous flavour.

Medium-bodied varietal Touriga Nacional Dão

Our pick

A medium-bodied varietal Touriga Nacional, with medium tannin and high acidity, lifts the buttery, slightly acidulous paste of a young Serra da Estrela, and the cream of the raw ewe's milk softens the wine's tannin.

Vinho Verde white blend with Alvarinho, Avesso or lees ageing Vinho Verde

Our pick

Serra da Estrela is mild, clean and slightly acidulous with a buttery paste. A dry, unoaked Vinho Verde blend that brings in Alvarinho or Avesso, or rests longer on its lees, has a little more substance and still the high acidity to cut the cream.

Dry Dão rosé Dão

Our pick

A fresh Serra da Estrela is buttery and only slightly acidulous. A dry Dão rosé brings red-fruit freshness and acidity that cut the cream and leave the palate ready for the next mouthful.

Dry Vinho Verde rosé Vinho Verde

Our pick

Serra da Estrela is mild and slightly acidulous with a buttery paste. A dry Vinho Verde rosé made in steel, light in body with high acidity, lifts the cream and leaves the palate fresh for the next mouthful.

Alvarinho, dry white Vinho Verde

Our pick

Culture magazine calls all-Alvarinho Vinho Verde bigger and broader than the delicate Loureiro wines, so a dry Alvarinho can stand beside a soft, buttery Serra da Estrela while its high acidity still cleans the palate.

Traditional-method Vinho Verde sparkling (Alvarinho, Loureiro, Arinto, Avesso) Vinho Verde

Our pick

Serra da Estrela is buttery and only slightly acidulous, and bubbles cut cream. A dry traditional-method Vinho Verde sparkling from the region's white grapes brings high acidity and the length that comes from time on its lees.

Light, low-tannin Dão red or palhete Dão

Our pick

A light Dão red or palhete, low in tannin and high in acidity, keeps the creamy, unctuous paste of a young Serra da Estrela fresh on the palate, and there is no grip for the soft cheese to fight against.
