Quinta dos Roques began bottling varietal reds in 1996 and added a barrel-fermented Encruzado in 1998, one of the wines that established the variety as Dão's serious white.
Light straw and perfectly clear, with an elegant bouquet of fruit and a slight touch of resin. Freshness registers before anything else on the palate, then the structure and complexity come through, and the finish is very long.
Half the wine ferments and ages seven months in 500 litre French oak with bâtonnage twice a week; the other half stays in stainless steel at 16C to 18C.
The estate names seafood, strong fish dishes and spicy food. Salt cod baked with cream, grilled octopus and prawn curry all work.
