Saperavi from Mukuzani vineyards on the north bank of the Alazani, picked from early October and given three years in oak: ripe berries and blackcurrant mellowing into blackberry and spicy oak depth.

    Mukuzani is the Kakhetian house red for grilled beef; oak spice meets char.
  • Chakapuli, lamb stewed with tarragon and green plums
    Three years of oak give the wine enough weight for lamb while the sour plum lifts it.
  • Aged guda cheese
    Firm tannin needs salt and fat; a hard sheep's cheese supplies both.
