Kisi is the rarer, finer-boned cousin of Rkatsiteli. Qvevri-fermented then oak-matured, it lands somewhere between dried apricot and toasted hazelnut.

What it pairs with

  • Chakhokhbili, chicken stewed with tomato and coriander
Herbal lift in the stew finds the wine's floral top notes; the tannin handles the braise.
  • Grilled trout with walnut sauce
Oak maturation gives the weight a freshwater fish in a rich sauce needs.
  • Aged guda cheese
    Sheep's-milk salt sharpens Kisi's stone-fruit core.
