Aroma: black cherry, damson, dried herbs

Palate: blackcurrant, blackberry, earth

The Vinoterra qvevri Saperavi: extended skin contact, no oak, so the fruit and the clay do the talking. Full-bodied, firm and savoury with a long dark-berry finish.

What it pairs with

  • Mtsvadi, Kakhetian vine-cutting barbecue
Charred pork fat needs Saperavi's tannin and acidity to reset the palate between skewers.
  • Chashushuli, slow-braised beef with tomato and herbs
The braise's sweet tomato edge meets the wine's dark-berry core without either side losing shape.
  • Aged sulguni
Salt and smoke in the cheese soften the wine's grip and pull out its dried-herb register.
