In the glass
Aroma: walnut, dried apple, spice
Palate: walnut, green apple, spice
Started in 2016, this is the estate's oxidative Savagnin short of Vin Jaune: three years under the veil rather than six and a quarter, never topped up. The domaine describes a cuvee that keeps freshness alongside the aromatic complexity of oxidative Savagnin.
What it pairs with
-
Comte
The default Jura pour for a veil aged white. -
Mushroom dishes
The walnut and spice register reads savoury and meets fungal aromas directly. -
Poultry in cream sauce
The wine's weight and acidity both cut and carry a cream sauce.
