The estate describes a wine that starts as a classic fruity white and turns, over six and a half years on blue and black marl Savagnin, into something else entirely. No topping up, a veil of yeast on the surface, and an intensity the domaine warns can wrong foot a first time drinker.

What it pairs with

  • Poularde with cream and morels
The estate lists it, and it is the canonical Jura plate for Vin Jaune.
  • Aperitif with walnuts and Comte
The domaine opens its own list with walnuts and Comte before the meal.
  • Duck foie gras
Named on the estate's list; the wine's acidity cuts the fat.
  • Trout in Vin Jaune
A Franche-Comte dish the estate names, cooked with the wine it is served with.
  • Comte, Mont d'Or and Morbier
The domaine's own cheese board for this bottle.
