Palate: lemon, green apple, salt

Ouille means topped up: the barrels are kept full, no veil of yeast forms, and the wine stays fresh and precise rather than oxidative. The domaine has made it since the estate began and calls it a lively, precise reading of Savagnin.

What it pairs with

  • Grilled white fish
A topped up Savagnin has the tension of a taut white and none of the walnut weight.
  • Shellfish
The salinity and high acidity suit crustaceans.
  • Goat cheese
Fresh acidity and citrus meet the lactic tang.
