Vin Jaune from the small L'Etoile appellation, Savagnin picked late off grey and blue Lias marl at 40 hl per hectare and left under the veil for more than six years. The domaine records walnut, spice and vanilla, elegance and harmony, and calls it a wine for long keeping.

What it pairs with

  • Chicken with morels
Named by the domaine as the house match.
  • Braised ham in cream
Montbourgeau lists jambon braise a la creme on its serving card.
