In the glass
Aroma: walnut, curry spice, dried apple
Palate: walnut, spice
The domaine's first Vin Jaune, started in 2016. Six years and three months under the yeast veil with the cask never topped up, in a cellar deliberately left open to ventilation and temperature swings, then the 62 cl clavelin. The estate promises high complexity and a long life.
What it pairs with
-
Chicken with morels
The standard Jura pairing for a veil aged Savagnin, and the one the appellation is built around. -
Aged Comte
Comte's crystalline salt meets the veil's walnut register. -
Curried dishes
The oxidative spice of Vin Jaune is one of the few white wine registers that handles curry.
