Clay limestone marls of the same kind as the blue marl that suits Savagnin, a terroir the estate says keeps acidity and structure in the wine. Fine, delicate bubble with fresh, elegantly fruity flavour. Dosed at 2 grams per litre.

Pneumatic pressing with little rebeching, a light settling, then fermentation in stainless steel between 16 and 18 degrees. Four months on lees with the malolactic done during that time, second fermentation in cellars held at 10 degrees, eighteen months on laths. Dosage 2 g/l.
