A single 0.95 hectare parcel of heavy Trias clay over blue marl facing due south, vines planted between 1938 and 1973. The estate's sheet records a very pure, mineral wine with fruit and spice, a lively dense palate and a light oak frame still showing. No veil ageing is described for this cuvee, unlike the estate's Selection.

What it pairs with

  • Scallops
The estate names St Jacques specifically among its matches.
  • Shellfish
Tissot lists crustaceans; the cuvee's tension and salinity suit them.
  • Grilled white fish
Fish leads the estate's own pairing list for this parcel.
  • White meats
The estate closes its list with white meat, where the barrel frame gives enough weight.
