An openly oxidative blend: nine topped up months apart, then fifteen months together with no topping up under the veil. Chardonnay comes off clay parcels such as Le Moulin and En Chagnon and limestone ones such as Sauvagny and Chevrettes, the Savagnin off Trias clay. Walnut, white flowers, spice and a celery note.

The two grapes are picked and pressed separately and fermented spontaneously in cask and piece. Nine months of separate ageing with topping up, then the Chardonnay is blended with the Savagnin and the assembly spends a further fifteen months in the same casks with no topping up, under the yeast veil.
