Aroma: walnut, spice, vanilla

Palate: walnut, spice, vanilla

Drawn from 1.32 hectare of Trias clay at Les Bruyeres and La Vasee, vines planted between 1941 and 1976. Six years under the veil with no topping up, then the 62 cl clavelin. The estate notes walnut, spice and vanilla, and a palate it calls almost atypically unctuous.

What it pairs with

  • Chicken with morels
The estate's first listed match, and the standard Jura table for a veil aged Savagnin.
  • Truffle dishes
Tissot names truffles alongside morels; the veil's oxidative register meets the fungal aroma head on.
  • Curry
The estate suggests curried dishes, where the wine's spice and weight stand up to the heat.
  • Aged Comte
Old Comte is the estate's cheese recommendation for this bottle.

Hand harvest, destemming, pneumatic pressing and spontaneous fermentation in tank, then six years in 228 litre casks that are never topped up. About a third of the volume evaporates while the yeast veil protects the wine. Light filtration, then the 62 cl clavelin the appellation requires after six years and three months.
