Aroma: white peach, citrus blossom, almond, salted herbs

Palate: peach, lemon zest, herbal, clean mineral

Named for local volcanic-spring activity, Mofete is Zisola's fresh Grillo: peach-citrus aromatics, herbal freshness and clean mineral finish from the warm Noto terroir.

What it pairs with

  • Grilled prawns with garlic and lemon
Citrus blossom and fresh mineral notes complement chargrilled shellfish perfectly.
  • Caprese with Sicilian tomatoes
Peach and herb aromatics bridge mozzarella, ripe tomato and basil.
  • Tuna tartare with capers
High acid and salted-herb notes complement the brininess of capers against raw tuna.

History

Mofete, meaning volcanic gas vents, is Zisola's white wine addition, using Grillo from the sun-warmed Noto soils. It reflects the Mazzei family's commitment to native Sicilian whites alongside their red focus.
