Aroma: ripe cherry, elderberry

Palate: cherry, dark fruit

Pronounced ripe cherry and elder fruit, with soft, almost mature tannins still short of their final shape. The palate is long and memorable. Best served at 14 degrees.

What it pairs with

  • Red meat
Named first by the estate; the tannin has the structure for it even while soft.
  • Game
Vazisubani lists game, and the elder-fruit note suits darker meat.
  • Mature cheeses
The estate calls mature cheese an elegant choice against this wine.
