Aroma: raisin, spice, forest floor

Palate: dried dark fruit, spice

The reserve bottling takes nine months on the skins rather than the standard three to four weeks: raisined dark fruit and spice over a forest-floor base, full-bodied with refined round tannin and a long finish.

What it pairs with

  • Chakapuli of lamb
Nine months of skin contact builds the structure lamb and tarragon need.
  • Roast game bird
Forest-floor notes and gamey meat run in the same register.
  • Aged guda cheese
A mature sheep's cheese gives the firm tannin the salt and fat it wants.
