A mistelle rather than a fortified wine: the Savagnin juice is muted with marc before it can ferment, which is the whole Macvin method. The estate blends two thirds must to one third marc, ages the result in oak and bottles a year on.

What it pairs with

  • Served chilled as an aperitif
The domaine calls it an excellent aperitif and says so first.
  • Melon
The estate names melon, a regional Macvin serve.
  • Apple tart
Tarte aux pommes is on the domaine's own list.
  • Chocolate desserts
The estate finishes with chocolate based puddings.
