Unfermented Savagnin must stopped with a third of Marc de Franche-Comte and given two years in cask, reaching 18 degrees. Ligier describes an amber robe, a fine complex nose and a frank attack where marc and sugar meet on quince and spice.

What it pairs with

  • Served cold as an aperitif
The domaine pours it at 6 to 8 degrees before the meal.
  • Melon
A standard Jura Macvin serving, the fruit echoing the unfermented must.
  • Blue cheese
The sweetness and spirit carry salty veined cheese.
