The estate is blunt about this one: vinified in its original form, Savagnin is a wine you either adore or reject. Several years under the veil with no topping up give what the domaine calls incomparable heady notes of walnut and spice for a white wine.

What it pairs with

  • Poultry with cream and morels
The domaine names it, and cream sauces are its first recommendation.
  • Mushroom croute
Croute aux champignons is on the estate's own list.
  • Curry and Thai dishes
The estate suggests curry and south east Asian cooking for the oxidative spice.
  • Comte, Mont d'Or, Epoisses and Munster
The domaine's cheese list runs to strong washed rind cheeses.
