Two thirds unfermented must blended with one third Marc du Jura, which halts fermentation and leaves a lightly syrupy, naturally sweet mistelle at 145 grams of residual sugar. Bourdy notes fresh grape with ripe fruit and prune, the marc rounding rather than biting.
