What it pairs with

  • Agneau rôti aux flageolets
Firm tannin and mineral Gamay are a regional match with herb-roasted lamb and flageolet beans.
  • Lentilles du Puy au lard
Clay mineral and iron notes in the wine echo the earthy lentil and smoky lardons.
  • Cantal vieux
Aged Cantal's hard texture and tangy acidity pair with the wine's structure.

History

Christian Ducroux is one of Régnié's most committed biodynamic producers, holding Demeter certification. Exsultet ('rejoice') is his top cuvée, drawn from the oldest vines on the domaine's clay-granite parcels and fermented and aged without sulphur.

  1. 1998 — Ducroux converts to Demeter-certified biodynamic viticulture
  2. 2002 — Exsultet first released as the domaine's top parcel-selection Régnié
