In the glass
What it pairs with
-
Roast beef with bone marrow
The firm structure and high acidity cut through marrow richness; the iron note echoes beef. -
Wild boar stew
Gamey, earthy meat matches the wine's schist mineral and dark cherry core. -
Grilled cote de boeuf
Classic bistro pairing; the wine's structure handles char and fat.
History
Jean Foillard began making single-terroir Morgon from the Cote du Py in the mid-1980s, influenced by Jules Chauvet. The volcanic schist of the Py hill produces Gamay with unusual density and minerality.
- 1985 — First Cote du Py bottling under Foillard label
- 1992 — Domaine achieved full organic certification
