Aroma: black plum, violet, graphite, cedar

Palate: blackberry, iron, cocoa nib, tobacco

Syrah-led red from organic Mascaronne. Bordeaux-style backbone with cedar, graphite and dark-fruit depth; one of the more critically respected Cotes de Provence reds.

What it pairs with

  • Slow-braised beef short ribs
Le M's iron and tobacco grip handle collagen-rich beef; tannins frame the slow-cooked meat.
  • Aged Comte with walnut
Hard cow's-milk cheese aligns with the wine's cedar and cocoa-nib register.
  • Wild boar pappardelle
Gamey ragu meets the wine's iron and dark-fruit depth; pasta carries the structure.
  • Lamb shanks with rosemary
Long-cooked lamb meets the wine's tannin frame; rosemary echoes the cuvee's garrigue edge.

History

Le M was launched in the mid-2000s as Mascaronne's flagship organic red. The cuvee benefits from the estate's high-elevation Le Luc vineyards and has built a reputation as one of the better Cotes de Provence reds.
