Demeter biodynamic Les Baux red built around Syrah from old-vine parcels. Low-sulfite, concrete-egg and old-foudre raised; the estate's most expressive cuvee.

What it pairs with

  • Roast leg of lamb with rosemary
Firm tannin frames the lamb fat; garrigue notes echo the herb crust.
  • Wild boar civet
Game and the wine's tobacco-and-iron register share Provencal heritage.
  • Aged Tomme de Provence
Sheep's milk Provencal tomme picks up the wine's salt and black pepper register.
