Aroma: white peach, honeysuckle, wax, lemon zest

Palate: pear, almond, saline, fennel

Semillon-led Provencal white from Ott's coastal Clos Mireille estate near La Londe-les-Maures. Wax, honey and saline depth from vineyards within a few hundred metres of the Mediterranean.

What it pairs with

  • Grilled langoustines with garlic butter
Clos Mireille's saline core matches shellfish sweetness; the wax-almond palate handles the butter.
  • Sea bass baked in salt crust
The seasoned fish meets the wine's saline depth; pear-and-fennel notes echo the herb-scented cooking.
  • Lobster bisque
Rich shellfish soup finds a peer in the wine's wax and almond texture.
  • Saffron risotto with prawns
Saffron's bittersweet edge meets the white's wax-and-almond palate; the body handles the cheese-bound rice.

History

Marcel Ott acquired Clos Mireille in 1936 as the family's second estate (after Chateau de Selle in 1912). The Blanc de Blancs became the estate's flagship in 1958 and remains one of the few serious whites in AOC Cotes de Provence, made from Semillon planted on coastal schist.
