La Selva is the cooperative's premium single-vineyard selection from older vines in the Selva parcel. Partial oak fermentation adds texture and complexity beyond the standard cooperative Custoza, demonstrating the appellation's premium potential.

What it pairs with

  • Roasted chicken with morainic herbs
The wine's cream texture and stone fruit complement roasted poultry.
  • Pasta con gamberi e bottarga
Textured Custoza stands up to the brininess of bottarga and prawn pasta.

History

La Selva was introduced by the Cantina di Custoza cooperative to demonstrate quality beyond the volume entry-level. Selected from older vines in the Selva sub-parcel of the cooperative's morainic vineyards, partial oak fermentation was chosen to show that Custoza DOC could produce structured, food-serious whites.

  1. 2002 — Cantina di Custoza introduces La Selva as a premium single-parcel oak-fermented tier.
