Aroma: green apple, citrus peel, white flowers, saline

Palate: lemon curd, chalk mineral, crisp apple, dry bread

Brut Nature (zero dosage, under 3 g/l residual sugar) is the driest legal Prosecco style. Ius Naturae showcases the natural grape sugar without added liqueur, emphasising Glera's inherent acidity and mineral character.

What it pairs with

  • Oysters on the half-shell
Zero-dosage dryness and saline thread is the ideal backdrop for briny oysters.
  • Sashimi
Clean and racy finish cleanses the palate between delicate slices of raw fish.
  • Burrata with lemon dressing
The wine's citrus and chalk echoes a lemon-dressed fresh cheese.

History

The Brut Nature style emerged in Prosecco in the 2010s as producers responded to demand for drier, lower-intervention expressions. Bortolomiol's Ius Naturae (Latin: 'natural law') was one of the first dedicated zero-dosage Valdobbiadene DOCG releases, reflecting Giuliana Bortolomiol's commitment to minimal intervention.

  1. 2014 — Bortolomiol releases Ius Naturae as a zero-dosage Brut Nature expression of Valdobbiadene DOCG.
