Filanda (silk mill) is the top non-Cartizze label from Bortolomiol, employing a longer extended Charmat contact for added yeast-derived complexity. A brut style with more depth than the entry-level range.
What it pairs with
-
Risotto ai funghi porcini
The bread and cream notes in the wine complement the earthiness of porcini risotto. -
Tempura prawns
High acidity and fine perlage cut through light batter and rich prawn flesh. -
Burrata with truffle oil
Complexity of the Filanda matches the richness of burrata and truffle.
History
Filanda was launched to represent the premium tier of Bortolomiol's Valdobbiadene DOCG production. The name references the historic silk mills (filatoio) that were the economic backbone of the Treviso hills before viticulture became dominant. Extended Charmat contact was a deliberate stylistic choice to add complexity.
- 2010 — Bortolomiol launches Filanda as a premium Brut using extended autolysis in Charmat.
