Yellow green with golden hues. The estate's youngest sparkling, four years on the lees, with orchard fruit and gentle autolytic notes over a mineral finish. Residual sugar 3.5 g per litre.

What it pairs with

  • Oysters
Medot names oysters; high acidity and fine bubbles cut the brine.
  • Fish or meat carpaccio
The producer names carpaccio; the wine lifts raw protein without weighing it down.
  • Baked fish
Four years on lees give the weight for a cooked fish plate.
