Light gold with green hues. Five years on the lees, with honey and brioche over acacia and citrus and a mineral marl signature. Residual sugar 1 g per litre.

What it pairs with

  • Lightly spiced fish dishes
Medot names them; the extra brut dosage keeps the palate clean against seasoning.
  • Carpaccio
The producer names carpaccio; fine bubbles lift the raw meat.
  • White meat
Five years on the lees give the body to carry roast poultry.
