Beans, potato, sauerkraut and cured pork: sour acidity and fat in one bowl. High tannin is stripped by the kraut, so Brda Merlot works, medium tannin and plum fruit against the smoked pork.
Aged Tolminc, potato, egg and pork fat fried until both sides crust. Rebula fermented or raised in large oak has the weight to sit beside it and the acidity to cut what the cheese leaves.
Belica serves njoki under a browned sauce with grated cheese: soft, fatty, salty, with no acidity of its own. Merlot supplies it, plus tannin for the cheese and dark fruit for the butter.

Olives returned to Brda after the freeze of the late 1920s and the November oil is green, peppery and bitter at the back of the throat. Bone dry Rebula carries that without adding sweetness.
Tolminc is made from raw cow's milk in the upper Soča valley and held at least 60 days, a year or more in the older variants. Long skin contact gives a white the tannin to stand in front of it.
Winter radič dressed warm over beans is bitter, earthy and sharp with vinegar. Sauvignonasse left on the skins answers bitterness with bitterness, quince and almond grip against the leaf.
