Aroma: honey, candied peel, chamomile, poached pear, toast

Palate: lemon, Asian pear, pineapple, saline minerality

Caroline Gilby MW, writing for the cellar, describes fruit from the best terraced sites fermented on the skins in large oak, giving a complex nose of toast, honey, candied peel and chamomile over a salty mineral base.

What it pairs with

  • Grilled langoustine
Weight and salinity meet the sweetness of the shellfish.
  • Roast veal
The oak raising gives the structure for browned white meat.
  • Aged cheese
High acidity cuts the fat and the candied peel note lifts the salt.
