Pale pink with bluish reflections and a moreish floral nose of rose petal, jasmine and violets over red fruit, then a soft, elegant palate with real volume.
Godelia's rosado comes from Mencía vines over sixty years old on a mix of fine elements, quartzite and slate. The fruit is chilled to 5 degrees, hand sorted, gently destemmed and briefly macerated in tank before the free-run juice is bled off and cool fermented. Production is deliberately small.
Pale pink with bluish reflections. The nose is moreish and floral, with rose petals, jasmine and violets over red fruit nuances; the palate is soft, elegant, very fresh and persistent.
The fruit is chilled to 5 degrees, gently destemmed and briefly macerated, then the free-run Mencía juice is bled off, settled for 24 hours and fermented in stainless steel at 15 degrees. No oak is used.
Drink within one to four years of the vintage, served at 6 to 8 degrees Celsius.
Trout salad is the producer's own pairing. Grilled vegetables and chicken escabeche also work.
