Straw yellow, fresh and complex, with white flowers and citrus wrapped in bakery and nut aromas from the lees, a fine bead and a persistent close.
The estate's first sparkling wine, produced by the traditional method with a second fermentation in bottle. The Godello comes from vines of 30 to 60 years on rolled pebbles and quartzite between 500 and 700 metres, and the wine spends twenty-two months on lees before disgorgement.
Straw yellow in colour. The nose is fresh and complex, with subtle white flowers and citrus wrapped in bakery and toasted nut aromas from the lees contact. The bubble is fine and delicate, the character fruity and refreshing, with balanced acidity and a persistent finish.
By the traditional method: the bubble comes from a second fermentation in bottle, and the wine rests twenty-two months on lees before disgorgement.
It is an extra brut, which sits at the dry end of the dosage scale.
Oysters are the producer's own recommendation; salt cod fritters and jamón ibérico also suit it.
