Aroma: red fruit, deep mineral base

Palate: sweet concentration, fresh lift, velvety close

A naturally sweet Mencía from grapes left to overripen on the vine: red fruit over a mineral base, sweet and concentrated but fresh, with a velvety finish.

What it pairs with

  • Dark chocolate desserts
The producer's own pairing; sweetness and acidity handle the cocoa bitterness.
  • Blue cheese
Salt and sweet balance each other, as the estate suggests.
  • Game dishes
An unusual match the producer recommends, where the concentrated fruit meets the meat.

History

Libamus is Godelia's rarest wine, made only when the season allows. Over-ripened Mencía from vines more than eighty years old is hand picked, chilled, cryomacerated at 5 degrees for ten days, fermented at 20 degrees and then arrested by cooling, with thirty days on skins and eight months in fine-grain French oak.
