An assemblage of Mencía from the estate's younger parcels, each with its own aspect, exposure and microclimate. Fermentation runs at a constant 25 degrees in 150 hectolitre tanks with pigeage and pump-overs to suit the extraction, and the wine keeps four months on its fine lees.
Deep cherry red with a medium depth of colour and a violet rim. The nose is intense with fresh wild fruit, floral notes and low scrub over a light mineral edge; the palate is savoury, fresh and elegant with soft tannin and a long, persistent finish.
Drink within one to five years of the vintage, served at 14 to 16 degrees Celsius.
There is no oak. It rests four months on its fine lees in tank after a 12 to 15 day maceration on skins.
Barbecued meat and cecina del Bierzo are the producer's own suggestions; pizza also works.
