What it pairs with

  • Barbecued meat
The producer pours it at barbecues, and the soft tannin keeps it easy against smoke.
  • Cecina del Bierzo
Wild fruit and scrub notes suit the local cured beef.
  • Pizza margherita
High acidity handles the tomato and the cheese together.

History

An assemblage of Mencía from the estate's younger parcels, each with its own aspect, exposure and microclimate. Fermentation runs at a constant 25 degrees in 150 hectolitre tanks with pigeage and pump-overs to suit the extraction, and the wine keeps four months on its fine lees.
