What it pairs with

  • Jamón ibérico
The wine's almond character and dry freshness pair naturally with acorn-fed cured ham.
  • Ortiguillas fritas
Sea anemone fritters, a Jerez local speciality, have a marine richness the Fino's salinity complements.
  • Almonds, olives and pickled vegetables
Classic Andalusian aperitivo snacks that mirror the wine's own character.

History

El Maestro Sierra (meaning 'the sierra master') was founded around 1830 in a bodega in the Jerez historic centre and has been associated with the Borrego family for generations. The estate produces extremely limited quantities from very old soleras in traditional conditions, with no industrial infrastructure.
