What it pairs with

  • Rabo de toro (Córdoba oxtail stew)
Andalusian braised beef with spices is a natural match for aged dry Oloroso.
  • Wild boar ham (jamón de jabalí)
Wild game charcuterie's intensity matches the dark complexity of 15-year Oloroso.
  • Torta del Casar
The creamy, pungent Extremaduran sheep's cheese holds up to the full-bodied dry Oloroso.

History

El Maestro Sierra's Oloroso 15 Años is produced from fully oxidative soleras that have never had contact with flor. The minimum 15-year age commitment results in significantly greater depth and complexity than commercial Olorosos. The small bodega in Jerez's historic centre maintains these old soleras with no artificial acceleration.
