  • Roasted chestnuts and walnuts
Nut aromatics in the wine resonate with roasted autumn nuts.

How to serve Amontillado VORS

Allow 5 minutes from open to pour.

  1. Open and pour. Open and pour directly. No decanting required for this style.
  2. Serve at 8-10°C. Cellar temperature (8-10°C) is the band for this style. Warmer pushes alcohol forward; colder dampens aromatics.
  3. Glassware. Use a Sherry copita: the bowl shape rewards the wine's structure.
  4. Pair with. Perdiz estofada (braised partridge), Aged Manchego or Ibores, Roasted chestnuts and walnuts. Match the wine's structure to the dish's fat and salt.

History

Bodegas Tradición was founded in 1998 with the explicit mission of releasing only VORS and VOS aged sherries from old soleras purchased from retiring families or dormant bodegas in the Jerez triangle. The Amontillado VORS is sourced from soleras originally established decades earlier; Tradición ages, blends and bottles without compromise to commercial volume.

  1. 1998 — Bodegas Tradición founded with a VORS-only mission; old Amontillado soleras acquired
  2. 2000 — VORS Amontillado certified under the new Consejo Regulador classification
